Prawn, calamari and avocado salad

    lemon juice
  • 2
    castor sugar
  • 2
    olive oil
  • 1/4
  • sea salt and black pepper
  • SALAD:
  • 6
    red salad onions, finely chopped
  • 1
    Mediterranean cucumber, cut into small cubes
  • 2
    avocados, peeled and cut into small cubes
  • sea salt and black pepper
  • 200
    calamari rings, cooked
  • 20
    prawns, peeled and cooked
  • 1
    baby gem lettuce, leaves separated
Servings: Change Serving


For the dressing:
Place the lemon juice and castor sugar in a bowl, stir to dissolve the sugar, whisk in the olive oil and mayonnaise, and season. Add the salad onions, cucumber, avocado, prawns and calamari to the bowl, stir gently to combine and coat in the dressing, then set aside.

To assemble:

Place a lettuce leaf in each serving bowls or glass and carefully spoon in the salad.
To serve:
Place in the fridge until ready to serve, or serve immediately.
