Ingredients (10)

2.00 red chillies — chopped
1.00 garlic — cloves, finely chopped
30.00 ml fresh coriander — chopped
30.00 ml brown sugar
5.00 ml fish sauce
50.00 ml water
salt
30.00 prawns — frozen
15.00 ml lemon juice
lemon — or lime, sliced and fresh coriander, to garnish

Method:

Place the chillies, garlic, chopped coriander, brown sugar, fish sauce and water in a wok and bring to the boil. Season with salt. Boil for about 10 minutes to reduce.
Add the prawns and lemon juice, shaking the wok to coat the prawns with the sauce. Heat until the prawns are just cooked, 5 minutes at the most.
Serve hot with lemon slices and sprinkle with chopped coriander. Alternatively, thread the prawns and lime slices onto skewers.
