Prawn bisque with noodles

    carrot, peeled and diced

    onion, finely chopped

    dried basil

    prawns
  • 125
    ml
    dry white wine

    vegetable stock

    conchigliette pasta

    tomato paste

    cream

    ml
    cayenne pepper

    ml
    lemon juice
 

Method

30 minutes
 
1. Heat butter in a large saucepan. Add carrots, onion and basil and sauté for five minutes. Add prawns and cook for a further three minutes. Add wine and 250 ml stock and simmer for two minutes. 2. Remove prawns and peel them. Reserve half the prawns and blend remaining prawns and soup in a food processor until smooth. 3. Return to the saucepan, add remaining stock, the pasta and seasoning to taste. Cover and simmer for 15 to 20 minutes until the pasta is cooked. Stir in tomato paste, cream, cayenne pepper, lemon juice, and reserved prawns and simmer for two minutes before serving.
