Prawn and noodle deluxe

    g
    rice vermicelli or egg noodles
  • 30
    ml
    peanut or canola oil
  • 2
    red chillies
  • 2
    fat cloves garlic
  • 15
    ml
    minced ginger
  • 1
    large bunch spring onions
  • 4
    baby marrows
  • 20
    cooked, shelled prawns
  • 45
    ml
    fish sauce
  • 15
    ml
    brown sugar
  • 2
    limes, juice
  • 5
    ml
    chicken stock powder
  • handful peanuts (preferably raw) and coriander to serve
 

Method

 
If using rice vermicelli, soak noodles before beginning preparation. Then cook according to manufacturer's instructions. Egg noodles do not require soaking but should be cooked separately while the stir-fry is cooking.
Heat oil in a large wok or frying pan.
Add chillies, garlic and ginger and stir-fry for a few seconds.
Add spring onion and baby marrow and cook for about 3 minutes.
Add remaining ingredients, except nuts and coriander. Cook over high heat for two to three minutes. Add cooked and drained noodles and toss to heat through. Stir in coriander and nuts and serve immediately.
