Potatoes with sweetcorn filling

    potatoes: large potatoes in jackets, scrubbed
  • 5
    ml
    salt
  • 180
    g
    filling: chopped ham or cooked bacon
  • 60
    g
    sweetcorn
  • 10
    g
    chopped chives
  • 60
    ml
    mayonnaise
  • 125
    ml
    topping: grated cheese
 

Method

Preheat the oven to 200°C.
Grease a baking sheet.

Potatoes: Place the potatoes in cold salted water, bring to the boil and cook until done.
Cool slightly and cut a deep cross into each one. Press the underside to open up the potato.

Filling: Mix the filling ingredients and spoon into the opened potato.

Topping: Place the potatoes on the baking sheet, sprinkle with cheese and bake until the cheese has melted and the potato is heated through.
Serve with braai meat.
