Ingredients (12)

6.00 potatoes — medium
1.00 onion — finely chopped
1.00 garlic — cloves, crushed
oil
1.00 green pepper — deseeded and diced
600.00 g beef mince
65.00 g tomato paste
410.00 g tomato and onion mix
sea salt and freshly ground black pepper
oregano
30.00 ml sugar
250.00 ml cheddar cheese — grated

Method:

Preheat the oven to 180 ºC (350 ºF). Boil the potatoes in their jackets in salted water until tender. Fry the onion and garlic in a little oil until tender. Add the green pepper and stir-fry for 1 minute. Add the mince and stir-fry with a fork until done. Add the tomato paste and tomato and onion mix and season with salt and pepper to taste. Add origanum to taste and a little sugar, if desired. Reduce the heat and simmer the mixture until a nice thick sauce has formed. Cut a cross on top of each potato and press it at the bottom so it opens on top. Spoon a little of the mince mixture on top, sprinkle with cheese and bake for 20 minutes or until the cheese has melted. Serves 6.
