Ingredients (5)

1.00 kg potatoes — peeled and sliced into 3mm slices
0.00 olive oil — for shallow frying
2.00 onions — large, finely sliced
6.00 eggs — large
10.00 ml paprika

Method:

Heat the oil in a 26 cm non-stick pan over a medium heat. (To test if the oil is ready, drop a slice of potato into the pan – it should start to bubble immediately.)
Add potato slices and stir, then allow to cook for five minutes. Stir once during cooking.
Add the onions and cover pan partially. Continue to cook for 15 minutes, stirring every five minutes.
Reduce heat if potatoes are browning too quickly.
Remove lid and cook for a further five to 10 minutes, until tender and golden.
Remove from the heat and drain the potatoes and onions well and set aside.
Beat the eggs and paprika in a large bowl.
Stir in the potato and onion and season well with salt and freshly ground black pepper.
Pour a little of the drained oil back into the pan and add the potato mixture.
Fry over a medium heat for five minutes, turn by inverting onto a plate and then fry the other side for a further three to five minutes.
Turn out onto a platter and cut into bite-sized pieces.
