500.00 ml potatoes — mashed
1.00 eggs — extra-large, whisked
1.00 onion — finely chopped
125.00 g mushrooms — sliced
2.00 eggs — extra large, whisked
sea salt and freshly ground black pepper

Method:

Preheat the oven to 160ºC (325ºF). Spray a muffin tin with 12 hollows with non-stick spray.
Mix the mashed potato with one egg. Line the muffin tin hollows with the potato mixture to form a crust.
Sauté the onion in a little oil until tender. Add the mushrooms and stir-fry lightly. Season with salt and pepper to taste and transfer to a mixing bowl. Add the remaining two eggs and mix. Spoon a little of the mixture into each hollow and bake for 25 minutes or until the mixture has set. Cool slightly in the muffin tins, loosen around the edges and carefully remove from the tins.
Serve lukewarm.
Makes 12-14 potato tartlets.
