Potato, spinach and asparagus tart

Ingredients

  • 400
    g
    potatoes, cut into thick slices and boil until almost soft
  • 500
    g
    chopped and cooked spinach
  • 300
    g
    asparagus spears, chopped into chuncks
  • 1
    onion, cut in rings and caramelized in olive oil
  • Egg custard
  • 150
    ml
    milk
  • 2
    eggs
  • 30
    ml
    flour
  • 5
    ml
    mustard powder
  • 3
    ml
    salt
  • 2
    ml
    pepper
 

Method

Preheat over to 180°C.
Grease a pie dish with butter or olive oil.
Place all the custard ingredients together and mix well, set aside.
Place potatoes in the pie dish, add asparagus, add spinach and onions lastly.
Pour custard over ingredients add cheese on top and bake for 20 -35 minutes, or until custard has set and the tart is golden brown and crispy on top.
