Potato salad with yoghurt dressing

Ingredients (8)

dressing: 40 ml hummus
12 ml lemon juice
150 ml yoghurt — plain
1 garlic — cloves, crushed
40 ml water
30 ml fresh parsley — chopped
salad: 1.2 kg baby potatoes
400 g green beans — halved
250 g feta cheese — cubed
75 ml piquanté peppers — drained, quartered

Method:

Dressing Whisk together all the ingredients or blend in a food processor.

Salad Boil or steam the potatoes and beans separately until just tender.

Drain, rinse under cold water and drain again.

Place the cooked potatoes, beans and cheese in a bowl and lightly mix with half the dressing.

Drizzle with the remaining dressing, scatter the peppers on top and garnish with parsley.
