Potato salad with yoghurt dressing

Ingredients

  • dressing: 40 ml hummus
  • 12
    ml
    lemon juice
  • 150
    ml
    plain yoghurt
  • 1
    garlic clove, crushed
  • 40
    ml
    water
  • 30
    ml
    chopped fresh parsley
  • salad: 1.2 kg baby potatoes
  • 400
    g
    green beans, halved
  • 250
    g
    feta cheese, cut into 2 cm cubes
  • 75
    ml
    piquanté peppers, drained and quartered
 

Method

Dressing Whisk together all the ingredients or blend in a food processor.

Salad Boil or steam the potatoes and beans separately until just tender.

Drain, rinse under cold water and drain again.

Place the cooked potatoes, beans and cheese in a bowl and lightly mix with half the dressing.

Drizzle with the remaining dressing, scatter the peppers on top and garnish with parsley.
