Potato salad with red wine dressing

    large potatoes
  • 2
    onions, finely chopped
  • oil
  • 200
    red wine
  • 400
  • salt and pepper
  • 1
    hard-boiled egg, sliced
  • 50
    finely chopped parsley

Boil the potatoes in salted water till done. Cool slightly before removing the skins. Dice or slice the potatoes and place in a salad dish. Sauté the onion in a little heated oil till soft and sprinkle over the potatoes. Blend the red wine and mayonnaise together and season generously with salt and pepper. Pour over the salad and mix lightly, taking care not to break the potatoes. Arrange the egg slices on top and sprinkle with parsley. Chill until needed. Serves 4-6.
