Potato salad with hot bacon dressing

  • 250
    g
    bacon
  • 65
    ml
    water
  • 65
    ml
    white wine vinegar
  • 500
    g
    potatoes, cooked, peeled and finely cubed
 

Method

 
Fry or grill bacon until crisp, then drain on kitchen paper. Pour out most of fat, keeping back about 30 ml (2 T) in pan. Add water and vinegar and simmer for about 1 minute, stirring constantly with a wire whisk. Crumble bacon into pan and season to taste with salt and pepper. Pour over potatoes just before serving, mixing thoroughly.
