Potato salad with feta cheese

    medium-sized potatoes

    ml
    mayonnaise
  • 190
    ml
    sour cream
  • 30
    ml
    wine vinegar
  • salt and freshly ground black pepper
  • 25
    ml
    wholegrain mustard
  • 140
    ml
    chopped spring onions
  • 140
    ml
    chopped chives
  • 300
    ml
    (about 3 rounds) feta cheese, crumbled
 

Method

 
Boil the potatoes in lightly salted water until tender. Drain the potatoes, skin while still hot and dice. Beat the mayonnaise, sour cream and vinegar together and season generously with salt and pepper. Stir in the remaining ingredients and pour over the potato salad. Mix lightly and serve lukewarm or cold. Serves 8.
