Potato salad with feta

    medium potatoes
  • salt

    ml
    mayonnaise
  • 190
    ml
    sour cream
  • 30
    ml
    wine vinegar
  • salt and freshly ground black pepper
  • 25
    ml
    wholegrain mustard
  • 140
    ml
    chopped spring onions
  • 140
    ml
    chopped gherkins
  • 300
    ml
    feta cheese, crumbled
 

Method

 
Boil the potatoes in salted water until done, drain and skin while warm. Cut into cubes. Beat the mayonnaise, sour cream and vinegar and season mildly with salt and pepper. Stir in the rest of the ingredients and pour over the potatoes. Mix lightly and serve lukewarm or cold. Serves 8.
