Potato salad with apple and bacon

    potatoes
  • 100

    rindless bacon, coarsely chopped
  • 2
    green apples, sliced
  • 15

    lemon juice
  • DRESSING
  • 30

    finely chopped chives
  • 30
    ml
    capers
  • 50
    ml
    finely chopped parsley
  • 5
    ml
    salt
  • 125
    ml
    mayonnaise
  • 125
    ml
    sour cream
  • freshly ground black pepper, to taste
 

Method

Boil potatoes in their jackets for about 25 minutes until tender. Set aside to cool, then peel and cube. Fry the bacon until crisp and add to the potatoes. Toss the sliced apples in the lemon juice, then add to the potatoes. DRESSING: Mix all ingredients together and pour over the salad.
