Potato salad

The perfect accompaniment to almost any braai meal.

Ingredients

 
  • 4
    potatoes
  • 2
    eggs, boiled
  • 4
    Tbs
    Trim mayonnaise
  • Parsley, chopped
  • Salt and pepper to taste
Servings: Change Serving
 
 

Method

 
Peel and cut potatoes in cubes.
Boil potatoes until they are cooked but still firm to the touch.
Allow potatoes to cool down completely.
Slice hard-boiled eggs and add to the potatoes.
Mix with Trim Mayonnaise and chopped parsley.
Season with salt and pepper.

African cooks use leaves from the massive baobab tree to thicken their stews. Like okra, the leaves give the dish a congealing texture that's characteristic of West African stews. Okra will give a similar effect if you can't find baobab leaves.
