  • 4
    large potatoes
  • 2
    hard-boiled eggs, peeled and chopped
  • 1
    green or red pepper, chopped
  • 1
    stalk celery, finely chopped
  • 1
    onion, finely chopped
  • 3
    ml
    prepared mustard
  • 3
    ml
    paprika
  • salt and freshly ground black pepper
  • 375
    ml
    mayonnaise
 

Method

 
Boil potatoes in their jackets, then peel and dice into small cubes. Place in a large mixing bowl.
Add all remaining ingredients, toss gently and serve garnished with fresh chopped parsley. Serve with BBQ spare ribs and Coleslaw.
