Potato salad

  • 750
    g
    baby potatoes
  • 1
    small lemon, finely grated rind
  • 30
    ml
    lemon juice
  • DRESSING
  • 150
    ml
    plain yoghurt
  • 30
    ml
    mayonnaise
  • 4
    chives, chopped
  • 45
    ml
    chopped dill
  • salt and freshly ground black pepper
  • lemon wedges for serving
 

Method

 
Cook the potatoes for 10 to 12 minutes in rapidly boiling water until tender.
Drain and cool under cold running water.
Drain well and mix lightly in a dish with the lemon rind and juice.
Leave to cool.
In a large dish mix all the ingredients for the dressing and pour over the potatoes.
