Ingredients (7)

2.00 potatoes — medium, peeled and cubed
30.00 ml butter
1.00 onion — finely chopped
45.00 ml cream
1.00 eggs — yolk only
2.00 ml nutmeg — whole, freshly grated
salt and freshly ground black pepper

Method:

1. Steam potatoes until soft, drain water and allow to dry a little. Rub potatoes through a fine sieve.
2. Melt butter and sauté onion. Add cream and reduce heat.
3. Add potato to onion mixture, and stir in egg yolk, nutmeg and seasoning. Mix thoroughly and serve.
