    medium potatoes, peeled and cubed
  • 30
    ml
    butter
  • 1
    onion, finely chopped
  • 45
    ml
    cream
  • 1
    egg yolk
  • 2
    ml
    freshly grated nutmeg
  • salt and pepper
 

Method

 
1. Steam potatoes until soft, drain water and allow to dry a little. Rub potatoes through a fine sieve. 2. Melt butter and sauté onion. Add cream and reduce heat. 3. Add potato to onion mixture, and stir in egg yolk, nutmeg and seasoning. Mix thoroughly and serve.
