Potato pot bread

    potato flour
  • 30
    ml
    sugar
  • 1
    packets (15 g) instant yeast
  • 10
    ml
    salt
  • 125
    ml
    margarine
  • 2
    eggs, beaten
  • 15
    ml
    oil
  • 250
    ml
    luke warm water
  • 125
    ml
    milk
 

Method

Preheat the oven to 180°C.

Grease a cast-iron pot including its lid with margarine.

Sift the dry ingredients together. Rub in the margarine with your fingertips until well mixed.

Mix in the rest of the ingredients and add to the flour mixture.

Mix through and knead for about 10 minutes. Allow to rise in a warm place for about 30 minutes.

Knock down, form into a ball and place in the pot. Allow to rise well then bake for an hour until done.
