Potato pizza with Gorgonzola and thyme

Serve this meat-free pizza scattered with fresh thyme.

    olive oil
  • 2
    pizza bases
  • 4
    medium potatoes, parboiled and thinly sliced
  • 120
    Gorgonzola-style cheese
  • 10
    fresh thyme
  • 2
    olive oil
  • Extra thyme to granish
  • Sea salt and black pepper
Servings: Change Serving



Preheat the oven to 210°C. Place two baking trays in the oven to heat.

Drizzle ¼ cup olive oil over pizza bases. Top with potato slices, sprinkle with cheese and thyme, and drizzle with 2 tbsp olive oil. Remove hot trays from the oven and sprinkle with flour, then place pizzas on them. Return to the oven and bake for 10 minutes.

To serve:
Scatter with thyme and season well. Slice and serve.
