Potato parcels

    baby potatoes, scrubbed clean
  • 2
    bunches shallots, cut into chunks
  • 6
    garlic cloves, cut into pieces
  • thyme sprigs and bay leaves
  • freshly ground black pepper to taste
  • olive oil


Divide the potatoes, shallots and garlic among 6 large sheets of aluminium foil.
Place a sprig of thyme and bay leaf on top of each and season with salt and black pepper.
Drizzle with olive oil and wrap the foil around the ingredients.
Place the parcels among lukewarm coals for 30 to 60 minutes (depends on the size)- until the potatoes are done.
