Potato pancakes with grilled mushrooms

  • POTATO PANCAKES
  • 250
    g
    potatoes, peeled
  • 100
    ml
    cake flour
  • 150
    ml
    hot milk
  • 1
    medium-sized egg
  • salt and pepper
  • 60
    ml
    oil
  • GRILLED MUSHROOMS
  • 6
    Portabellini mushrooms
  • 100
    g
    butter
  • 2
    large garlic cloves, crushed
  • salt and pepper
  • flat-leaf parsley
 

Method

 
POTATO PANCAKES
Boil the potatoes until soft and drain. Mash and add the flour.
Whisk together the milk and eggs and add slowly to the potato mixture.
Season with salt and pepper and whisk until smooth.
Heat about 15 ml of the oil in a pan and pour in enough of the batter to coat the base of the pan.
Fry for one to two minutes one ach side and keep warm in the oven.

GRILLED MUSHROOMS
Preheat the oven to 200 °C.
Arrange the mushrooms on a roasting rack, hollow sides facing up.
Blend the butter, garlic, salt, pepper and parsley and spoon a generous amount on top of each mushroom.
Grill until just melted.
Serve on potato pancakes.
