Potato pancakes

    ml
    mashed potato
  • 2
    medium eggs, beaten
  • 250
    ml
    crème frâiche or sour cream
  • salt to taste
  • 125
    g
    rocket leaves
  • 12
    slices prosciutto or ham
  • 125
    ml
    sun-dried tomatoes, with oil
  • 12
    black olives
  • milled black pepper
 

Method

 
While mashed potatoes are still warm, beat in eggs, crème frâiche and salt. Heat an oiled frying pan. Drop large spoonfuls of potato mixture into pan and brown lightly on both sides over moderate heat. Cool and serve, layered with rocket, prosciutto, sun-dried tomatoes and olives. Season to taste with black pepper.
