Potato pan dish

  • 250
    g
    onions, sliced into rings
  • oil
  • 750
    g
    potatoes, scrubbed and sliced into rings
  • 250
    ml
    Cheddar cheese, grated (optional)
  • salt and pepper to taste
  • parsley for sprinkling on top
 

Method

 
Sauté the onions in a little oil until soft. Remove from the pan. Heat another 15 ml oil in the pan, then arrange layers of potatoes and onions and a little grated cheese in the pan. Season every potato layer with salt and pepper. Cover and simmer slowly until the potatoes are soft. Sprinkle with extra Cheddar cheese if preferred and heat until just melted. Sprinkle with parsley and serve hot. Serves 4.
