Potato loaf

Ingredients

  • 280
    g
    wholewheat flour
  • 120
    g
    white bread flour
  • 7
    ml
    bicarbonate of soda
  • 5
    ml
    salt
  • 10
    ml
    brown sugar
  • 250
    g
    potato, peeled and grated
  • 500
    ml
    buttermilk
  • a little milk
  • 50
    ml
    sesame seeds
 

Method

Preheat the oven to 180 ºC (350 ºF). Spray a 23 x 13 x 7 cm loaf tin with non-stick spray. Using a fork, gently combine the wholewheat flour, white bread flour, bicarbonate of soda, salt and brown sugar in a large mixing bowl. Add the grated potato and mix. Add the buttermilk and mix to form a fairly slack dough. !f the dough is too dry, add about 50 ml milk and mix gently. Turn the dough into the prepared loaf tin and sprinkle with the sesame seeds. Bake for one and a half hours or until a skewer inserted into the centre comes out clean. Turn out onto a wire rack and allow to cool. Slice and serve with butter. Makes a medium loaf.
