Potato, ham and snow-pea salad

    baby potatoes
  • 180

    fresh button mushrooms, thinly sliced

    snow-peas (mange-tout peas)
  • 4
    slices ham, cut into strips
  • green pepper cut into strips
  • stalk celery, chopped
  • 15
    ml
    chopped chives or parsley
  • lettuce leaves
  • DRESSING
  • 125
    ml
    olive oil
  • 15
    ml
    dry white wine
  • 15
    ml
    vinegar
  • 15
    ml
    lemon juice
  • 2
    ml
    dried oregano
  • salt and pepper to taste
 

Method

 
Scrub potatoes and place in a large saucepan with salted water to cover. Bring to the boil and cook until just tender. Cut into quarters and place in a large bowl. Keep warm. Blanch snow-peas in boiling water for about 30 seconds. Drain and add to potatoes. Add mushrooms, ham, celery and chives to potatoes. Pour dressing over and toss lightly. Arrange lettuce leaves on a platter or individual plates and arrange salad in the centre. Serve while warm. To make dressing whisk together all ingredients in a jar. Serves 4.
