Ingredients (14)

250.00 g baby potatoes
180.00 g button mushrooms — thinly sliced
100.00 g mangetout
4.00 ham — slices, sliced into strips
green pepper — strips
celery stalks — chopped
15.00 ml fresh chives — or fresh parsley, chopped
lettuce
DRESSING
125.00 ml fresh chillies — 573
15.00 ml wine — dry white
15.00 ml vinegar
15.00 ml lemon juice
2.00 ml dried oregano
salt and freshly ground black pepper — to taste

Method:

Scrub potatoes and place in a large saucepan with salted water to cover. Bring to the boil and cook until just tender. Cut into quarters and place in a large bowl. Keep warm. Blanch snow-peas in boiling water for about 30 seconds. Drain and add to potatoes. Add mushrooms, ham, celery and chives to potatoes. Pour dressing over and toss lightly. Arrange lettuce leaves on a platter or individual plates and arrange salad in the centre. Serve while warm. To make dressing whisk together all ingredients in a jar.
Serves 4.
