Potato fry

    medium potatoes
  • 5
    ml
    turmeric powder
  • 5
    ml
    mustard powder
  • 50
    ml
    cooking oil
  • 5
    ml
    mustard seeds
  • 7
    ml
    salt
  • 5
    ml
    lemon juice (optional)
 

Method

Peel and slice potatoes into small cubes and wash thoroughly and drain.

Add the turmeric and mustard powder and mix thoroughly,  and allow these potatoes to marinate for about 15 minutes.

Heat oil in a heavy based non stick frying pan, add mustard seeds and allow to splutter, before adding the potatoes.

Lower heat, cover pan and allow the potatoes to cook till they are soft and tender.

Remove lid season with salt and lemon juice, allow to cook for a further 5-6 minutes or till the potatoes crisp a little.

Serve with rotis or fresh bread.
