    mashed potato
  • 1
    onion, finely chopped and sautéed, if desired
  • 2
    extra-large eggs, beaten
  • 75
    ml
    cake flour
  • 7
    ml
    baking powder
  • 2
    ml
    mustard powder
  • pinch cayenne pepper
  • oil for deep-frying
 

Method

 
Mix all the ingredients for the potato fritters. Drop spoonfuls of the mixture into heated oil and fry till brown. Alternatively, add any of the suggested variations according to taste. Makes about 40 fritters.
