Potato diamonds

  • 500
    g
    baby potatoes
  • coarse salt
  • 30
    ml
    melted butter
  • 65
    ml
    softened butter
  • 30
    ml
    chopped fresh herbs
 

Method

 
Preheat the oven to 200 ºC. Wash potatoes under running water and cut each in half. Make diagonal incisions about 2 mm deep across the surface of each half to form diamond pattern. Arrange potato halves on a baking tray. Brush with melted butter and sprinkle with coarse salt. Bake until crisp and done, then remove from the oven. Meanwhile, mix the butter and herbs and refrigerate-to harden slightly. Place a small dollop of herb butter on each potato half, sprinkle with herbs and serve immediately. Serves 4.
