500.00 g baby potatoes
sea salt
30.00 ml butter — melted
65.00 ml butter — softened
30.00 ml fresh herbs — chopped

Method:

Preheat the oven to 200 ºC. Wash potatoes under running water and cut each in half. Make diagonal incisions about 2 mm deep across the surface of each half to form diamond pattern. Arrange potato halves on a baking tray. Brush with melted butter and sprinkle with coarse salt. Bake until crisp and done, then remove from the oven. Meanwhile, mix the butter and herbs and refrigerate-to harden slightly. Place a small dollop of herb butter on each potato half, sprinkle with herbs and serve immediately.
Serves 4.
