Potato cakes with a savoury filling

    mashed potatoes, cooled

    eggs, beaten
  • 125
    g
    butter or margarine
  • 250
    ml
    warm milk
  • 750
    g
    cake flour
  • 30
    ml
    baking powder
  • 5
    ml
    salt
  • 15
    ml
    sugar
  • egg, beaten
  • FILLING
  • 3
    hard-boiled eggs, grated
  • 15
    ml
    mayonnaise
  • 2
    ml
    chopped parsley or dill
 

Method

 
1. Mix potato, eggs, softened butter and milk together. 2. Sift together flour, baking powder and salt, add sugar. 3. Add to potato mixture. Mix together until smooth and pliable. 4. Pat out on a lightly floured surface and cut into rounds or form into buns. Place on a greased baking sheet. Brush with beaten egg and bake at 200 ºC for 10 to 15 minutes. 5. Mix together filling ingredients. Slice buns in half and fill with egg mayonnaise.
