Potato cakes and caviar

  • 4
    large potatoes, peeled, boiled and mashed
  • 2
    eggs, whisked
  • 125
    ml
    sour cream
  • 150
    g
    cake flour
  • salt and pepper to taste
  • oil for shallow frying
  • caviar
 

Method

 
While the potatoes are still warm, add eggs, sour cream, flour and seasoning. Mix well. Place spoonfuls into heated oil and fry for one minute on each side, or until golden. Drain on paper towels. Serve warm with a spoonful of caviar. Makes 30 small cakes.
