Ingredients (5)

6.00 potatoes — medium
100.00 ml parmesan cheese — grated
3.00 eggs — beaten
salt and freshly ground black pepper — to taste
nutmeg — grated

Method:

Scrub potatoes with a brush, and boil until almost cooked.
Place overnight in refrigerator, peel and grate roughly. Mix in 100 ml of finely grated Parmesan cheese, eggs and seasoning.
Spoon mixture into well-greased muffin pans and bake at 200 ºC until done.
