    large potatoes, peeled and grated
  • 2
    onions, peeled and grated
  • 75
    ml
    cake flour
  • 2
    ml
    baking powder
  • 5
    ml
    salt
  • 2
    ml
    pepper
  • 2
    eggs, lightly beaten
  • oil for frying
 

Method

Combine the potatoes and onions in a mixing bowl and allow to stand for about 5 minutes. Drain all the liquid and add the cake flour, baking powder, salt, pepper and eggs. Mix well.

Heat sufficient oil in a pan and drop spoonfuls of the batter into the hot oil. Fry until cooked through and golden brown on both sides. Drain on kitchen towelling. Makes about 15 cakes.
