Potato cake

  • 1
  • nutmeg, salt and pepper
  • spring onions, finely sliced
  • tomato sauce (see recipe)


Boil a potato in its jacket until just tender. Break it open slightly with a spoon. Season with nutmeg, salt and pepper and finely sliced spring onions. Stir in a little of the braised tomato sauce. Butter a fairly large cup and press the potato into the cup so it forms a round, flat cake. Turn out onto a plate when needed.
