    large potatoes, boiled in their jackets

    packet brown onion soup powder

    chutney

    water

    tomato and onion mixture
  • 125

    bacon, fried and chopped
  • 250

    fresh mushrooms, sliced
  • 250
    g
    courgettes, sliced
  • 50
    g
    Cheddar cheese, grated
  • salt
  • pepper
  • origanum
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish with margarine. Slice the potatoes. Blend the onion soup powder, chutney and water. Arrange alternate layers of potatoes, tomato and onion mixture, bacon, mushrooms and courgettes in the bowl. Repeat the layers, ending with a layer of potato. Sprinkle the cheese on top and season to taste with salt, pepper and origanum. Pour the onion soup mixture over the potato dish and bake for about 40 minutes or until the sauce has thickened. Serves 6-8.
