Ingredients (12)

8.00 potatoes — large, boiled with skins on
1.00 soup powder — brown onion
100.00 ml chutney
250.00 ml water
410.00 g tomato and onion mix
125.00 g bacon — chopped and fried
250.00 g mushrooms — sliced
250.00 g courgettes — sliced
50.00 g cheddar cheese — grated
salt
freshly ground black pepper
oregano

Method:

Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish with margarine. Slice the potatoes. Blend the onion soup powder, chutney and water. Arrange alternate layers of potatoes, tomato and onion mixture, bacon, mushrooms and courgettes in the bowl. Repeat the layers, ending with a layer of potato. Sprinkle the cheese on top and season to taste with salt, pepper and origanum. Pour the onion soup mixture over the potato dish and bake for about 40 minutes or until the sauce has thickened.
Serves 6-8.
