Ingredients (8)

POTATO DOUGH
450.00 g potatoes — cooked, mashed
100.00 ml flour — cake
sea salt and freshly ground black pepper
FILLING
20.00 ml oil
2.00 onion — finely chopped
250.00 g cooked mince — leftover, seasoned
dried mixed herbs
salt and freshly ground black pepper — to taste

Method:

Preheat the oven to 180 ºC and grease a 20 cm square ovenproof dish with butter or spray with non-stick spray. Mix the mashed potato, cake flour, salt and pepper together. Divide the dough in two halves and roll out on a floured surface. Use one half of the dough to line the base of the prepared dish. Heat the oil and sauté the onions over medium heat until soft. Add the cooked mince and season generously with mixed herbs and extra salt and pepper to taste. Spoon the mince into the prepared dish, spreading evenly. Roll out the remaining dough and place on top of the meat. Brush lightly with melted butter and bake for 30-40 minutes until the dough is golden brown. Serve with a mixture of chutney and tomato sauce and a mixed salad.
Serves 4 as a light meal.
