Potato and leek bake

Ingredients

  • 500
    g
    potatoes, peeled and sliced
  • 4
    cloves garlic, crushed
  • 8
    leeks, sliced
  • 500
    ml
    cream
  • 30
    ml
    chopped fresh thyme
  • 125
    ml
    grated Parmesan
  • salt and freshly ground black pepper
  • a knob of butter
 

Method

about 1 hour
 
Simply layer the veggies and pop in the oven.
Preheat the oven to 180 °C.
Layer potatoes and leeks in an ovenproof dish with chopped garlic and thyme sprinkled on each layer.
Pour over cream, sprinkle over Parmesan and season.
Cover and bake for one hour or until the potatoes are creamy and soft.
