Ingredients (6)

8.00 potatoes — medium, peeled
6.00 spring onions — sliced
250.00 ml ham — or gammon, cooked, cubed
salt and freshly ground black pepper — to taste
15.00 ml butter
15.00 ml oil

Method:

Boil potatoes whole, then set aside to cool.
Grate the cold potatoes into a large bowl.
Gently mix in the spring onions, ham and seasoning to taste.
Heat the butter and oil in a large heavy-based frying pan.
Make patties from the potato mixture by pressing it together in your hands.
Place patties in the frying pan and cook over a very low heat for about 15 minutes on either side, or until golden and crisp.
Serve immediately with salad.
