Ingredients (7)

3.00 potatoes — medium, peeled and cubed
2.00 eggs — large, beaten
15.00 ml flour — cake
5.00 ml salt
125.00 ml cheddar cheese — grated
100.00 g ham — cooked, chopped
0.00 oil — for frying

Method:

Put the potatoes into a saucepan and cover with water.
Bring to the boil, then reduce the heat and simmer gently until just tender.
Remove from the heat and drain well.
Mash with a potato masher and let the mixture cool.
(Don’t cook the potato for too long, otherwise it will become too soft and absorb too much water.)
Stir in the eggs, flour, salt, cheese and ham and mix well.
(If you don’w want to use ham, replace it with a small chopped onion, vienna sausages or chopped cooked chicken.)
Heat a layer of oil in a large frying pan.Turn over using an egg lifter and cook until the other side is golden.
Drain on a piece of paper towel.
Serve hot as a snack or with a salad for lunch or supper.
