Potato and green bean salad

Ingredients

    potatoes, scrubbed
  • 4
    sweet potatoes, scrubbed
  • 250
    g
    green beans, trimmed and cut into 3 cm pieces
  • 60
    ml
    sunflower oil
  • 15
    ml
    red wine vinegar
  • 2
    hard-boiled eggs, chopped
  • 30
    ml
    freshly chopped parsley
 

Method

12 to 15 minutes
 
Boil the potatoes and sweet potatoes until they are just tender.
Peel and cut into cubes.
Boil the beans in a little water until they are just tender.
Remove from the heat and drain.
Place the potatoes and beans in a salad bowl.
Mix the oil and vinegar and pour over the salad.
Top with the egg and parsley and season to taste with salt and freshly ground black pepper.
