Potato and cauliflower with spinach

    potatoes, peeled and quartered
  • 30

    oil
  • 1
    onion, peeled and cut into wedges
  • 1
    green chilli, seeded and chopped (optional)
  • 3

    turmeric
  • 5
    ml
    ground coriander
  • 5
    ml
    mustard powder
  • 5
    ml
    cumin seeds
  • 450
    g
    cauliflower, broken into smaller florets
  • 200
    ml
    water
  • salt and freshly ground black pepper
  • 200
    g
    baby spinach leaves, washed and hard stems removed
  • 25
    ml
    natural yoghurt
 

Method

 
Cook the potatoes in a large pot of salted water for about 5 minutes. Heat the oil in a large pan and sauté the onion and chilli until tender. Add the spices and sauté for another minute. Add the potatoes, cauliflower, water, salt and pepper, and boil for 8-10 minutes until tender. Add the spinach and heat until wilted. Remove from the heat and stir in the yoghurt. Serves 4-6 as a side dish.
