Potato and bacon fritters

    strips rindless bacon, finely chopped
  • 300
    g
    potatoes
  • 10
    ml
    butter, melted
  • 1
    large egg, lightly beaten
  • 60
    ml
    self-raising flour
  • 20
    ml
    Cheddar cheese, grated
  • 20
    ml
    chutney
  • 20
    ml
    natural yoghurt
  • oil for deep frying
 

Method

 
1. Fry bacon pieces until cooked. 2. Boil potatoes until tender. Leave to cool slightly before peeling and mashing. 3. Place remaining ingredients in a large bowl. Mix until well combined. 4. Heat the oil in a saucepan over medium heat. 5. Drop spoonfuls of batter into the oil and deep fry for about five minutes or until evenly browned and puffed. Drain on absorbent paper and serve hot or cold.
