Potato and bacon bake

    margarine
  • 60
    ml
    flour
  • 400
    ml
    milk
  • 125
    ml
    grated Cheddar cheese
  • 500
    ml
    mixed frozen vegetables, thawed and drained
  • 8
    potatoes, peeled and sliced
  • 250
    g
    bacon offcuts, fried
  • 5
    ml
    dried mixed herbs
  • 1
    lettuce
  • 2
    tomatoes, cut into wedges
 

Method

1 hour
 
1. Heat margarine in a saucepan until melted. Stir in flour. Add milk gradually, stirring continuously until sauce thickens. Add half the cheese and season to taste. 2. Place mixed vegetables in the bottom of a greased ovenproof dish. Cover with a layer of potatoes and a little of the bacon. Pour half of the sauce over. 3. Cover with another 2-3 layers of remaining potatoes. Top with remaining bacon and sauce. Sprinkle with remaining cheese and mixed herbs. Bake in preheated 180 ºC oven for one hour until potatoes are tender. 4. Toss lettuce leaves and tomatoes together and serve on the side.
