Ingredients (9)

3.00 onion — finely chopped
4.00 tomatoes — peeled and finely chopped
10.00 ml cayenne pepper
7.00 ml coriander
70.00 g tomato paste
80.00 ml oil
125.00 ml wine — semi-sweet
salt — to taste
1.00 turkey — self-basting

Method:

Sauté the onion in a little oil till soft. Add the tomatoes and simmer till a nice thick sauce is formed. Add the remaining ingredients, except the turkey, and simmer for 5 minutes. Place the turkey in a large saucepan, pour aver the sauce and simmer for about 3 hours or till the turkey is done, or pressure cook for one and a half to two hours. Take care that the bird does not burn.
Serve the turkey with the sauce.
Serves 8.
