Ingredients (6)

100.00 g chocolate — plain
80.00 g castor sugar
150.00 ml wine — dessert
1.00 lemon juice
250.00 ml cream — thick
whipped cream — to garnish

Method:

1. Break chocolate into pieces. Mix sugar, wine and lemon juice in a heavy pan, cook over a gentle heat, stirring steadily, until sugar is dissolved.
2. Stir in cream and continue stirring until completely melted. Bring quickly to the boil, turn down heat and simmer very gently for 15 to 20 minutes, until mixture is thick enough to coat the back of a spoon.
3. Pour into little pots, leave to cool completely, then cover with clingfilm and refrigerate for at least 4 hours. Decorate and serve.
