    large baking potatoes
  • 250
    ml
    ricotta or low-fat smooth cottage cheese
  • 100
    g
    smoked salmon or salmon trout
  • 1
    small handful chopped fresh dill
  • 4
    spring onions
  • 30
    ml
    olive oil
  • sea salt and milled pepper
 

Method

 
Place well washed potatoes in a cold oven. Turn oven to 200 ºC and bake for 45 to 60 minutes.
Remove potatoes and transfer oven to grill.
Slice each potato in half and scoop out flesh.
Place flesh in a bowl and mix with all remaining ingredients - depending on the version you choose.
Pile mixture into the potato shells.
Place under the grill and cook until golden.
Serve immediately.
