Posh potatoes

  • baby potatoes, scrubbed
  • sour cream
  • lump fish or salmon roe, or caviar


Boil potatoes in salted water until tender but still firm. Remove and drain. Cool slightly (they're best served slightly warm) then cut a slit halfway down in potatoes. Place a dollop of cream in each slit and top with caviar or substitute. Arrange on a large platter and serve.
