Pork with pineapple

    pork, cut into cubes or strips
  • 30

    oil
  • 30
    ml
    butter
  • 1
    onion, finely chopped
  • 30

    cake flour
  • 250
    ml
    pineapple juice
  • 1
    small lemon (juice only)
  • 150
    ml
    chicken stock
  • 30
    ml
    pineapple jam
  • 125
    ml
    cream
  • 2
    ml
    thyme
  • salt
  • freshly ground black pepper
 

Method

Season the pork with salt and pepper and fry in the oil until brown. Remove from the pan and keep warm. Melt the butter in the same pan and sauté the onion until soft. Add the cake flour. Stir to form a smooth paste and remove from the heat. Add the pineapple juice and stir well. Return to the stove and heat until the sauce thickens. Add the remaining ingredients and the fried pork. Reduce the heat and simmer until the meat is tender and done, about 45 minutes. Serves 6-8.
