Ingredients (13)

1.00 kg pork — cubes
30.00 ml oil
30.00 ml butter
1.00 onion — finely chopped
30.00 ml flour — cake
250.00 ml pineapple — juice
1.00 lemon — small, juice only
150.00 ml stock — chicken
30.00 ml jam — pineapple
125.00 ml cream
2.00 ml fresh thyme
salt
black pepper — freshly ground

Method:

Season the pork with salt and pepper and fry in the oil until brown. Remove from the pan and keep warm.
Melt the butter in the same pan and sauté the onion until soft. Add the cake flour. Stir to form a smooth paste and remove from the heat. Add the pineapple juice and stir well. Return to the stove and heat until the sauce thickens. Add the remaining ingredients and the fried pork. Reduce the heat and simmer until the meat is tender and done, about 45 minutes. Serves 6-8.
