Ingredients (12)

400.00 g pork — deboned, sliced
10.00 ml wine
20.00 ml soy sauce
7.00 ml cornflour — maizena
0.00 0 sea salt and freshly ground black pepper
20.00 ml black bean sauce
0.00 0 garlic — cloves, finely chopped
10.00 ml fresh ginger — finely grated
0.00 0 onion — thinly sliced
80.00 ml oil
0.00 0 green pepper — sliced
40.00 ml water

Method:

Put the meat in a mixing
bowl. Sprinkle the rice wine
or sherry, soy sauce and
cornflour over the meat.
Season with salt and pepper,
mix lightly and stand
for 10 minutes. Mix the
black bean sauce, garlic
and ginger and set aside.
In a wok or large pan heat
half the oil over high heat
and stir-fry the meat in
batches for 3 minutes a
batch or until browned. Remove
from the wok or pan
and set aside. Heat the remaining
oil and stir-fry the
onion for 2 minutes. Add
the black bean mixture and
stir-fry for 1 minute. Add
the pepper strips and stir-fry
for 1 minute. Return the
meat to the wok or pan
and add the water. Stir-fry
for 2 minutes or until heated
through. Serve with
steamed white rice.
